Lean and Light Fixed Meal at Tangerine

ESPA’s very own restaurant now has a new nutritious yet flavourful menu, which is specially created by celebrity chefs Sam and Forest Leong, together with the input of ESPA’s resident naturopath.

“Who says healthy food need to taste awful? At Tangerine, be prepared to taste light and nutritional dishes which can be flavourful too,” says chef Forest Leong.

We sink our teeth into this nutritious menu for a first taste and pick out the best.

 Fresh Pear Crostini, $15

You ought to begin your meal with the Fresh Pear Crostini with Assorted Nuts drizzled with jasmine tea dressing. The bread’s complex carbohydrate has been substituted with a healthier slice of fresh pear, ferrying a scoopful of assorted nuts, oats and berries for a fibre-rich appetiser. The crunchiness of both the pear and assorted nuts complement each other perfectly.

Chef Forest’s Sous Vide Salmon Fillet with Red Capsicum Coulis and Tamarind Sauce, $18

This delicate piece of salmon fillet was prepared sous vide at 48oC for 12 minutes. This method will retain all of its anti-oxidant properties which can strengthen our bodies’ immunity system. Along with a generous portion of fiery red capsicum puree, the dish helps to lower the likelihood of an excessive chronic inflammation. Paired with the interplay of taste and texture, this main course is surprisingly pleasing to the palate.

Lemongrass Jelly and Wild Forest Berries in Chilled Coconut, $14

A discourse from the usual sweet treats, desserts at Tangerine is refreshing, light and nutritious. Embodying this is the Lemongrass Jelly and Wild Forest Berries in Chilled Coconut. Dunked in the husk of a fleshy coconut, the lemongrass jelly is infused with sweet fragrant coconut essence to help cleanse the palate after a wholesome meal.

At the end of a very relaxed and soothing treatment, a very conscientiously thought out meal is sure to put a memorable ending to a very pampering experience. Fret not if you are not a guest of ESPA, Tangerine also accepts walk-in guests and it’s a great place to sit back, relax and enjoy an awesomely healthy meal after a hectic day.
