Buon giorno! Did you know that the Italians are fiercely proud of their cuisine? But don’t worry if you cannot tell the difference between linguine and tagliatelle or bucatini and orecchiette. Come to Palio, Resorts World Sentosa’s signature Italian restaurant and let Chef Davide Bizzarri treat you to his new menu.

A native of Pisa, Italy, where some of the best Italian classics are found, we got Chef Davide to tell us about the new offerings at Palio.

1. Hi chef! What’s new at Palio?

As Italy braves the hot summer, we’ve given Palio’s menu a facelift — featuring lighter dishes that are just as satisfying. Dishes like the Squid ink tagliatelle with baby octopus, the burrata with tomato salad, and Barramundi served with Champagne vinaigrette and fava beans are beautiful refreshing classics.

We’ve also introduced traditional Tuscan favourites like the Pork sausage with cannellini beans “uccelletto”-style and the “Carabaccia” soup (an old renaissance-style onion soup with a hint of vinegar and toasted almonds).

2. What does “uccelletto”-style mean?

An “uccelletto” is a small bird. To cook beans “uccelletto”-style means to use the same seasonings you would for a small bird which are tomato, garlic, and sage.

3. For first-timers to Palio, what are the absolute must-tries?

I will recommend our Carpaccio di “Carne Salaada”—traditional marinated beef, thinly sliced and served with compote of red chicory; the Porcini mushroom homemade ravioli, with a hint of fresh mint in the filling that blends perfectly with the flavours of the mushrooms; and the Barley risotto with pork belly, prawn and garlic cream. Ladies will love our signature Cod fish “Merluzzo”, topped with crunchy herb crust and served with aged balsamic vinegar reduction.

4. Wow us with a trivia about any of your new dishes!

Did you know the French onion soup has its origins in the “Carabaccia” soup? Caterina de’ Medici, the great-granddaughter of Lorenzo the Magnificent was married to Henry II of France at the age of 14. She not only introduced Italian culture to France, her Tuscan chefs in-waiting might have brought the “Carabaccia” soup to the French kitchen, which has since achieved international status.
