Are healthy meals just about salads or plain dishes? That’s not the case at Tangerine.
The spa cuisine restaurant located inside ESPA at Resorts World Sentosa creates nutritious dishes that are bursting with flavours by using sauces and spice as accompaniments.
Tangerine recently refreshed its menu to be low in carbohydrates. This is beneficial to weight loss and is helpful in regulating blood sugar for diabetics. Important since Singapore has the second-highest proportion of diabetics amongst developed nations.
Of the new menu, celebrity chef Ian Kittichai who is consulting chef at Tangerine said, “As always, you’ll find flavourful and fresh dishes. My goal is to cook healthy dishes that do not lack in flavour, presentation and satisfaction.”
He has indeed achieved so. Here are some of the highlights in the new menu:
Scottish Salmon Fillet
The melt-in-your-mouth Scottish Salmon filet is paired with the earthy pumpkin puree, salmon mouse and salmon roe. The Rosella Dressing unifies the dish with a zing of tanginess.

Yellow Corn Fed Chicken Breast

Can chicken breast be moist and tender? Yes, the sous-vide method of cooking means the juices of the chicken are locked in. The dish is elevated by the luxurious truffle tamarind dressing and mushroom duxelle.

A soothing environment for a meal
Fitting ESPA’s theme of tranquility, you’ll feel like you’re away from the city when dining at Tangerine. The restaurant’s glass windows look out into the tropical gardens of ESPA with lush greenery, flowing water and small pools.
The restaurant is busiest during weekend lunch. If you’re planning to enjoy the tranquillity of the place, do come outside of its peak period.
