[SNEAK PEEK] First taste of The GREAT Food Festival 2018

There are food festivals, and there is The GREAT Food Festival (TGFF), which returns to Resorts World Sentosa (RWS) for a second year from 27 to 30 September 2018.

Not only do you get to indulge in gourmet creations by celebrity chefs from around the world, you also get to meet these culinary stars and learn from them personally (aka masterclasses).

Recently we got a sneak peek of what’s to come and man, we’re counting down to 27 September already.

Star Chef Arena

Be spoilt for choice with over 40 dishes prepared by overseas celebrity chefs and resident chefs of RWS. Here’s a sampling of what to expect:

Asian Crab Cake Slider with Homemade Squid Ink Bread by Ocean Restaurant. A crab meat patty sits between fluffy squid ink buns and a squeeze of mango mayo sauce that elevates the sweetness of the crab.
Braised Kurobuta Pork Belly with Deep Fried Bun by Forest. Chef Sam Leong’s modern interpretation of the Chinese Kong Bak Pao was quite a winner. The tender kurobuta pork belly goes so well with his special black pepper oyster sauce which gives it just enough heat to spice things up in your palate.
Stuffed Suckling Pig with White Cabbage Salad by CURATE. Chef Benjamin Halat wields his creativity again with this deceptively simple looking dish of roasted suckling pig stuffed with German bread dumpling and bacon. This baby takes three days to prepare. Just deboning the whole suckling pig takes a full hour, followed by 24 hours of soaking in brine, and other painstaking steps. The result is a hearty, savoury dish that’s rich in flavours and textures. And the white cabbage salad is a welcome side to refresh the palate.
Tonno Tataki, Bagna Cauda, Crumble di Pistachio by Fratelli Trattoria. Fresh tuna cubes were seared to yield extra flavour and aroma. A sprinkling of pistachio crumble adds a delightful nutty crunch to this lightly savoury creation.
Foie Gras with Pineapple Textures, Vanilla and Coriander by Osia Steak & Seafood Grill. The foie gras was coated with polenta and pan-seared to give a brittle crust that contrasts sublimely with the melt-in-your-mouth richness within. Beautifully orchestrated with the pineapple chutney and easily one of the best foie gras around.
Pumpkin Soup with Green Tea Ice Cream & Boston Lobster by TEPPAN by Chef Yonemura. Somewhat a cross between a starter and dessert, this quirky dish is sweetish with a tinge of bitterness from the green tea.

Rollin’ Sweet Times

Get set for Asia’s largest consumer dessert and pastry showcase with a line-up of the trendiest bakers and dessert chefs from around the world, including Chef Joe Leong of Forest and renowned Australian baker Andres Fatso.

Chef Joe Leong will be creating a variety of desserts, including this Reconstructed Egg Tart. A modern interpretation of the traditional Chinese egg tart. The buttery, flaky crust instantly melts in your mouth to reveal the silky egg pudding that leaves a light lingering sweetness.
Chef Andres gave the audience a taste of her upcoming baking masterclass by demonstrating how to make Kyoho grape macarons.

Secret Garden – Tanqueray Citrus Terrace

A first at TGFF, this first-in-Asia thematic Tanqueray Citrus Terrace is designed with gin aficionados  in mind with many unique gin cocktails.
