Psst: Here is another reason why we like Feb 16 – on top of the launch of Equarius Hotel and the Beach Villas, gourmands have further reason to be delighted. Local celebrity chef Sam Leong’s concept restaurant, Forest 森, located at the lobby of Equarius Hotel opens today as well.
After a two year break from the culinary scene, his tasty innovations are sadly missed; after all, his rise to fame was propelled by his creation of the succulent Japanese-inspired wasabi prawns and the much-replicated coffee pork ribs. Fortunately for us, the chef is back and set to wow foodies with his contemporary take on Chinese cuisine and exciting new creations.
Here are four things to anticipate with the launch of Forest 森.
1. Chinese cuisine with a twist
Chef Leong is no stranger to fusion food. For Forest 森, he will be combining familiar Chinese flavors with novel ingredients and presenting it all in a modern way. Drawing further inspiration from his wife, who is Thai (and incidentally also named Forest), he will inject Thai influences into his cuisine with Thai herbs and spices.
2. The Discovery menu
There is no better way to sample all of chef Leong and chef de cuisine Mike Tan’s combined gastronomical efforts than with the specially tailored Discovery menu. True to the restaurant’s concept of innovation and fusion, Forest 森 breaks the mould of traditional banquet style service and presentation, opting to challenge the senses for a multi-sensory dining experience.
3. Different dining experience, different restaurant concept
Chef Leong has taken a bold step by incorporating an open-concept Chinese-style kitchen, without any panels which would segregate the usually noisy kitchen typical of a Chinese restaurant from the main dining area. This means that you can view the chefs at work or choose to sit at the counter to get closer to the action as you enjoy your meal.
4. A rainforest inspiration
Inspired by the rainforest trees that scatter the Singaporean surround, Forest 森incorporates colours derived from Mother Nature, with the main centerpiece a canopy of intertwined branches and leaves supported by four magnificent “tree columns” made of light-coloured wood. It blends in well with the lush green theme of the West side of the resort, which we feel nicely complement a stay at the hotel or at the villas.
Forest森 is located at the Equarius Hotel lobby. It is open daily for lunch from 12pm to 2:30pm and dinner from 6pm-10:30pm. Forest seats 176 guests (indoor and alfresco). Dishes from the A La Carte menu start from $15. The 8-course Discovery menu is $180++ and 10-course Discovery menu is $250++.
