Ever indulged in a lovely meal at a celebrity restaurant and thought “if only I can cook like this at home”? We thought the same, until we realize we can leave the wondering at home and join Chef Sam Leong’s culinary class – right after a delightfully delicious four-course set lunch. Now you can have your cake and eat it too.
Located at Equarius Hotel, Forest 森will be launching culinary classes combined with a four-course set lunch in October. Helmed by Celebrity Chef Sam Leong, savour the new four-course Winter set lunch in a relaxing and contemporary setting before your masterclass session with chef Sam and his wife chef Forest. We take a look at the culinary adventure to expect.

This palate cleanser is as bold as its colours. Sweet cherry tomatoes topped with crushed ice infused with sour plum juice and mint leaves. It’s sweet, slightly salty, sour, sharp, yet subtle—the perfect pick-me-up before any meal.

If you are a fan of chawanmushi, this steamed egg will not disappoint. It is silky, smooth, soft and melts in your mouth. The chewy and springy Hokkaido scallop and the crisp fried fish skin added a whole new dimension to the velvety texture of the chawanmushi.

Here’s one for novelty lovers: soft, flaky steamed seabass with scales that are scalded with boiling 360 degree oil till crunchy. Accompanied by a few slices of okra, it sits in a pool of creamy curry- based sauce that adds a nice kick. It’s quite an experience biting into scales that disintegrates in your mouth like finely crispy crackers.

Fried rice with a twist: soft and firm pearl rice cooked to perfection with mixed with rice cereal grains for an added crunch. It seems like Sam Leong has a thing for crispy textures. The XO chilli sauce bits binds the entire dish together in a swirl of fragrant rice and savoury beef. Remember to mix well before digging in. Astoundingly wholesome and humble enough to make us think of home cooked goodness.

End off things with the signature Chilled Lemon Grass Jello with Thai Sweet Mango, Young Coconut and Wolfberries— refreshing on the palate and not too sweet. This treat exudes strong lemongrass aroma which invigorates the tastebuds. Needless to say, every last drop was slurped up.

The 2 hour masterclass with Chef Leong and Chef Forest will begin after a hearty meal. But what about that pesky food coma after the hearty lunch, you ask. We though the same too but the chefs were engaging and entertaining from the get go. The Chefs will demonstrate home-friendly cooking techniques for a few classic dishes and you can ask any culinary related questions.
The culinary masterclass with four course winter set lunch at Forest森 costs S$160 nett per person and is available every Tuesday, Thursday and Saturday in the month of October. Lunch will be served from 1pm-2pm and the masterclass is conducted from 2pm to 4pm.
