Celebrity Chef Sam Leong of Forest 森 has conjured up a unique 6-course dinner menu paying special attention to varied flavours with a focus on using light, healthy ingredients and minimal oil.

Begin with the hot and sour crab meat jello with poached spinach – refreshing and hits the right notes, neither too spicy nor salty. Continue with a clear, hearty bowl of double-boiled chicken soup with Glehnia roots. The highlight has got to be the deliciously crunchy crispy noodle cooked with tender sautéed Wagyu beef.
