With two Michelin stars under his belt, Chef Martin has been described by Michelin guide inspectors as an artist who “sketches” his dishes. His style is modern, sensuous and bold, with an emphasis on high-quality produce from the various regions of France.
An art and music aficionado, he cites Jacques Offenbach, Mozart and Glenn Gould as the inspiration to explore culinary boundaries, conceiving new colours, flavours and presentations for his creations.

- Maine lobster served warm, rhubarb, tomato flavoured with ginger
- Turbot glazed with poultry juice, cucumber juice and mango
- Bresse chicken with seasonal truffles, crispy polenta, green asparagus and chanterelle mushrooms
