Art at Curate Series Two with Chef Guy Martin

From Le Grand Véfour, the first grand restaurant in Paris, Chef Guy Martin brings his signature dishes to Art at Curate Series Two at Resorts World Sentosa, Singapore.

With two Michelin stars under his belt, Chef Martin has been described by Michelin guide inspectors as an artist who “sketches” his dishes. His style is modern, sensuous and bold, with an emphasis on high-quality produce from the various regions of France.

An art and music aficionado, he cites Jacques Offenbach, Mozart and Glenn Gould as the inspiration to explore culinary boundaries, conceiving new colours, flavours and presentations for his creations.

At Art at Curate Series 2, you’ll find signatures such as:

Foie gras raviolis, black truffles cream
Foie gras raviolis, black truffles cream
Truffles parmentier of shredded oxtail.
Traditional oxtail black truffles “parmentier”

The chef will also be presenting special creations for the season including

  • Maine lobster served warm, rhubarb, tomato flavoured with ginger
  • Turbot glazed with poultry juice, cucumber juice and mango
  • Bresse chicken with seasonal truffles, crispy polenta, green asparagus and chanterelle mushrooms
