Art at Curate Series 13 (18 – 24 Jan 2019)

Featuring Chef Guillaume Bracaval of Cuisine[s] Michel Troisgros, Hyatt Regency Tokyo (2 Michelin stars).

About Chef Guillaume Bracaval:
Chef Bracaval is known for his French haute cuisine crafted from ingredients sourced in Japan.

He trained at famous 3-Michelin-star restaurants in Paris, including “L’Arpège” (Alain Passard) and “Ledoyen” (Christian Le Squer), before helming 1-Michelin-star L’Agapé. In 2011, he worked in French restaurants in Tokyo where his appreciation for Japanese cuisine grew. On returning to France, he moved to “Troisgros” in Roanne and was appointed Executive Chef of “Cuisine[s] Michel Troisgros” in August 2012.

About Chef Ryuta Iizuka:
Chef Iizuka infuses the essence of Japanese culinary techniques into the foundation of French cuisine. He draws out the best in each ingredient and strips it down to reveal the ultimate in simplicity and pure flavour.

A native of Tōkamachi in Niigata prefecture, Chef Iizuka worked at Restaurant ‘Taillevent-Robuchon’ in 1994 before moving to France to apprentice at 2- and 3-Michelin-star restaurants. In 2005, he joined L’Atelier de Joël Robuchon where he led the restaurant to a 2-Michelin-star rating. In 2011, he opened Restaurant Ryuzu and received his own two Michelin stars four years later.

About Chef Daisuke Mori:
Chef Mori blends the finest French culinary traditions with Japanese ingredients and sensibility.

After completing an intensive vocational training course at the famous Tsuji Culinary Institute in Osaka, Japan in 2001, Chef Mori kicked off his career at the 3-Michelin-star Le Chateau de Joël Robuchon in Tokyo. His love for fusing French culinary traditions with fresh Japanese seasonal ingredients grew,and led to his impressive stints in world-renowned 2-Michelin-star Restaurant Taillevent in Paris and 1-Michelin-star Restaurant Signature at the Mandarin Oriental Tokyo.

About Chef Shinya Otsuchihashi :
Chef Otsuchihashi uses avant-garde techniques to create exquisite edible still life that draw upon his childhood in Japan and coming-of-age in France.

Born in Kagoshima Prefecture, Chef Otsuchihashi travelled to France at the age of 19 to study in the gastronomic centre of Lyon. Since then, he has worked both in haute cuisine — notably at the 3-Michelin-star Le Chateau de Joël Robuchon in Ebisu — and in smaller, less rarefied locations, such as Saturne in Paris and Restaurant Anis in Tokyo’s Hatsudai neighbourhood. In 2015, he opened his restaurant CRAFTALE, and was awarded a Michelin star in two years.
