If you thought the prata uncle at your kopitiam plays with food, then you should check out Italian chef Pasqualino Barbasso when he comes to town.  

Watch him twirl pizza dough possibly up to 2-metre wide at Resorts World Sentosa’s Italian restaurant Palio from 29 June to 8 July. A pizza chef by training who later honed his skills in acrobatic pizza-making, chef Barbasso has entertained spectators at tradeshows, exhibitions and unsuspecting customers at many pizzerias around the world.

Originally from the Sicilian province of Agrigento, 36-year-old Chef Barbasso began his career in his family’s pizzeria named Il Flaco Azzuro in Cammarata, where he still works when he’s not travelling. In 1998, he won the Sicily’s Acrobatic Pizza championship and by 2001, he was World Champion, a title he clinched in 2002 for a second time.

The pizza dough won't be that small in a few seconds.

But on top of the stunt show, guests to Palio during the promotion period will get to taste authentic, delectable pizzas made according to true Italian traditions from chef Barbasso’s hometown in Sicily.

Chef Barbasso will be Palio’s first guest chef, as part of an on-going RWS initiative titled Global Gourmet Kitchen to bring the world’s best masterchefs to Singapore, on a quarterly basis.

“I perform pizza acrobatics only to impress spectators. The biggest pizza doesn’t mean the best pizza. To bake a good pizza, you need to properly ferment the yeast in the pizza dough. Only with proper fermentation will the dough achieve the right kind of texture. You will also need to know how to work the oven to your advantage in the best way possible,” says Chef Barbasso.

During Chef Barbasso’s promotion, guests to Palio will be able to try some of his signature pizzas, including the Cenerentola which is laden with mozzarella and ricotta cheese, roasted potatoes, cherry tomatoes confit and a sprinkling of decadent caviar.

Palio and Chef Barbasso will present a special a la carte menu during this promotion. Palio is open for lunch daily from 12pm – 2.30pm, pizzas only from 2.30pm – 6.30pm and dinner from 6.30pm – 10.30pm (Sun – Thu); 6.30pm – 11pm (Fri, Sat, Eve of PH & PH).

Activities hosted by Chef Barbasso from 29 June – 8 July:

-           Pizza Acrobatic show at World Square (next to Palio) from 5.30pm – 6pm, daily

1 & 8 July, 3pm – 5pm

-          Pizza Acrobatic show & pizza-baking class for kids

-          $25++ per person; entitled to one 8-inch medium pizza  for dine in/ takeaway

29 June & 6 July, 3pm – 5pm

-          Pizza Acrobatic show & pizza-baking class for adults

-           $38++ per person; entitled to one 12-inch large pizza for dine in/ takeaway
