Uncovering L’Atelier de Joël Robuchon

Fresh vegetables like carrots, cucumber, vine tomatoes are immersed in water jars before dinner service daily: Robuchon believes this visual display improves the guests’ appetite.

 

Cleverly designed bag hooks under the counter table to hold your Prada, Gucci and Chanel while you dine.

 

Chef Marc is slicing thin silvers of Joselita Jamon Iberico ham, imported from all the way from Spain. Considered a rare delicacy, it weighed a hefty 8kg when it first arrived.

 

The Spice Rack is a common feature in Robuchon’s Ateliers in the world.
